In medieval times, Shrove Tuesday was the last chance to indulge yourself and to use up the foods not allowed during Lent, the Christian preparation for Easter. Pancakes were eaten on this day because they contain fat, butter and eggs which were forbidden during Lent. Whether you observe Lent or not, why not join in the fun of Pancake Tuesday? Pancakes are quick, easy and inexpensive to make for just one or a whole crowd.

This year, why not trying making pancakes on the bbq? These pancakes are sure to be a family hit!

Fluffy pancakes on the bbq
Ingredients:
3/4 cup milk
2 tbsp white vinegar
1 cup all-purpose flour (I use 1/2c. whole wheat and 1/2c. white)
2 tbsp white sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
2 tbsp butter, melted
cooking spray

Directions:
Combine milk with vinegar in a medium bowl and set aside for 5 minutes to “sour”.
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into “soured” milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
Heat a large bbq griddle** or cast iron frying pan over medium heat on the bbq, and coat with cooking spray.
Pour 1/4 cupfuls of batter onto the griddle, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Serve alongside back bacon on the bbq and fresh cut strawberries or bananas.

The one day a year that having breakfast for dinner is deemed acceptable! Enjoy it!

We had a wonderful ‘staycation’ lounging in our backyard, keeping cool under our Shadescapes umbrella, bbq’ing, and enjoying the summer heat in the swimming pool (and hot tub believe it or not). It was nice not to have to drive in traffic or pack any suitcases, but to simply enjoy our backyard with wonderful family and friends. Thanks to all who joined us in our backyard living oasis.
